Plain chia pudding had its moment, because this creamy chocolate version comes topped with golden caramelized bananas, melted dark chocolate, and flaky sea salt. But what turns this simple make ahead pudding into a dessert worthy of craving?

Ingredients

  • 1/2 Cup full fat creamy coconut milk

  • 1 Tbsp maple syrup

  • 1/2 Tsp vanilla bean paste

  • 2 Tbsp Glim Cacao Balance (or Dream)

  • 1/4 Cup chia seeds

  • Chocolate Topping

  • 2 Tbsp chopped dark chocolate 

  • 1 Tbsp creamy coconut milk

  • Caramelized Bananas

  • 1/2 Banana, sliced

  • 1 Tsp butter or ghee

  • 1 Tsp maple syrup

Directions

  1. In a bowl, whisk together the coconut milk, maple syrup, vanilla, Cacao Balance, and chia seeds.

  2. Let sit for 10 minutes, then whisk again. Cover and refrigerate overnight.

  3. Heat the butter (or ghee) in a small skillet. Add the maple syrup and banana slices, then cook for 2 to 3 minutes per side until golden and caramelized.

  4. Melt the dark chocolate with the coconut milk until smooth.

  5. Spoon the chocolate over the chilled chia pudding, top with the caramelized bananas, and finish with a sprinkle of flaky sea salt.
