Ingredients

  • 1/2 Cup cottage cheese

  • 1/4 Cup almond flour

  • 1/4 Cup vanilla protein powder

  • 1/2 Cup peanut butter

  • 2 Tbsp maple syrup

  • Fudge Layer

  • 1/2 Cup dark chocolate chips

  • 2 Tbsp coconut cream

  • 2 Tbsp Glim Cacao Balance (or Cacao Dream)

  • Toppings

  • 2 Tbsp salted peanuts, chopped

  • 2 Medjool dates, chopped

Directions

  1. Add the cottage cheese, almond flour, protein powder, peanut butter, and maple syrup to a blender and blend until smooth.
  2. Pour into a parchment-lined dish (we used a small glass food storage container) and spread into an even layer.

  3. Melt the dark chocolate chips, coconut cream, and Cacao Balance together until smooth.

  4. Sprinkle the chopped dates over the peanut butter layer. Pour the fudge topping over the top and finish with the chopped salted peanuts.

  5. Freeze for about 30 minutes, or until firm.

  6. Slice into 6 bites and store in the freezer.
